1. Chunky Vegetable & Roasted Tomato Paleo Marinara Sauce – My Natural Family
I got this recipe from my mother who got it from my grandmother. She got it from her mother in law who came straight from Sicily. My family is Italian and this recipe has been handed down from generation to generation. It can be made from fresh or canned tomatoes.
Of course, it is best if fresh tomatoes are used. This is a pretty standard recipe. I’ve been known to use it for lasagna sauce often or it can be used for pizza sauce or for any other recipe you need a basic tomato sauce for. The instructions say to cook it for 20 minutes for your convenience.
But truth be known, the secret is to let it simmer on the stove top for 8 hours and let all the liquid boil off. At the same time, all the flavors blend together. The whole neighborhood can smell the sauce when it’s cooked for so long. You can simmer it in a crock pot too probably. I make a big huge pot full and freeze the leftovers in containers that hold the amount I would use for a single meal.
2. Best Healthy Smoky Vegan Black Bean Soup – Gluten Free Daddy
This soup is made from scratch and has a deep smoky rich flavor because it’s cooked all day in the crockpot. I like to make a big batch so I can use it a ton of different ways for other meals throughout the week.
I like to not only serve it as a soup but I also like to serve it on top of nachos, put it on taco salad. I also like it drizzled on hot dogs and I use it as a dip for flatbread. I like to serve my Easy 4 Ingredient Spelt Tortillas – with it.
Making your own tortillas is so easy you wouldn’t believe it. I made this with dry black beans but you could make it with canned black beans. Just don’t follow the directions for soaking them then just add the beans after the vegetables are sauteed.
3. Southwest Loaded Vegan Baked Sweet Potato with Tomatillo Crema – Clean Eating Recipes
Baked Sweet Potatoes are delicious by themselves but when you add this tomatillo crema sauce it makes the recipe. Don’t miss it, it’s a little below the instructions for the loaded sweet potato. I stopped eating loaded baked potatoes a long time ago.
All the stuff I put on them wasn’t really healthy, like bacon, cheese, and sour cream. Now I just make this tomatillo crema sauce and I love it. The pico de gallo is wonderful on it too. This is a great meal for anyone but it’s also great if you’re on a Vegan diet. The tomatillos give it a southwestern flair with a little zing.
4. Bursted Tomato & Pesto Baked Paleo Spaghetti Squash – My Natural Family
This is a really good alternative to pasta. This “spaghetti” is made with spaghetti squash which is tossed in a dairy-free pesto and then it is topped with yummy bursted cherry tomatoes covered in garlic oil. The pesto sauce recipe that is included makes a good size amount so you can have plenty of pesto sauce, it’s the best part.

These beans are insanely easy to make and they taste way better than a can of beans. I like to make a big batch and then I freeze them into smaller individual size portions to use later. I can either “refry” them after they are thawed or I can leave them whole and use them for whatever meal I need them for.
6. Roasted Red Pepper Pasta Sauce from Scratch – Gluten Free Daddy
It’s so easy to roast red peppers. It’s basically like roasting any other vegetable, the oven does all the work. They have a wonderful deep roasted flavor. They are so good in the sauce. You have seriously got to try them. They are so easy, so good and so healthy. It’s a no-brainer in my opinion. I like to toss mine in with this Brown Rice Spaghetti, then serve it.
7. Vegan Baba Ganoush – My Natural Family
I think of this baba ganoush much like to do hummus. I like to dip pita bread or vegetables in it. I also use it in place of mayonnaise as a sandwich spread. My favorite veggies to eat it with are carrots, bell peppers, and peas. I love eating it this way because it gives me an opportunity to eat more veggies. Veggies and breads are a lot better with dips like this to eat them with.
8. Basic Chia Seed Pudding – Gluten Free Daddy
This is one of the easiest breakfasts you’ll ever make but be warned. You have to be organized because you need to make it the night before and put it in the frig to do its thing. That only takes 5 minutes though. In the morning it’s all ready to just take out of the frig and eat. To be totally honest, I haven’t always liked chia pudding but when I found this recipe, I changed my mind.
9. Oatmeal Breakfast Cookies – Clean Eating Recipes
I think breakfast cookies are a good idea because I can make a big batch and either keep them in the frig or the freezer. I can take them out and eat them or give to my kids when they’re in a hurry and say they don’t have time for breakfast.
I like that they can be portable if I need them to. My problem was I wanted them to be gluten-free, be easy to make and have no added sugar. I knew I would have to sweeten them with fruit. I tried several other recipes and none of them were exactly what I wanted.
I decided to take what I liked about each one and combine them for the PERFECT breakfast cookie to meet my needs. It turns out they are extremely healthy and they are delicious. You have to try them.
