I love Gluten-Free Peanut Butter Cookies! Alright, so I don’t know about you guys but I REALLY LOVE peanut butter anything! It is so delicious and peanut butter cookies are definitely a weakness of mine. Since I’ve had to eat gluten-free, I’ve been collecting Gluten-Free Peanut Butter Cookies recipes and listed here are 9 of the best.
I really didn’t want to “have” to give up peanut butter cookies to live a gluten-free lifestyle, so I’m so happy I found so many recipes. I wanted to be able to enjoy a favorite treat without having all the effects eating gluten does to my stomach!
Are you the type of person who loves crunchy or soft peanut butter cookies? I hate it when they get crunchy cause I love them soft. They are really easy to overcook. You often have to take them out of the oven when they don’t even look done because if you wait until they are brown, it’s too late.
Another trick I’ve learned is that those recipes with brown sugar in them dry out really quickly if you are storing them, so make sure and put something in the container to keep the cookies moist. I often use an old heel of a piece of bread that no one wants, or they do make little clay figures you soak in water.
Another thing I love to do when the cookies get hard is to dunk them in milk. But that isn’t a problem with some of the gluten-free peanut butter cookie recipes I have here because they are raw or have no flour of any kind in them. Several of these recipes are made with gluten-free oatmeal and some are made with alternative gluten-free flours. No milk necessary anymore.
