This gluten-free enchilada casserole is a super-simple, delicious, and healthy weeknight dinner that the entire family will love.



Optional Topping


  1. Preheat oven to 350 degrees
  2. Brown the meat with the diced onion and garlic until meat it cooked through
  3. Remove from heat and stir the green chilis into the meat mixture
  4. Spread one can of enchilada sauce onto the bottom of a 9×13 baking dish
  5. Layer 4 corn tortillas on top of the enchilada sauce, ripping in half so you can spread them evenly
  6. Layer 1/2 of the cheese on top of the tortillas
  7. Layer the meat mixture
  8. Layer the remaining 4 tortillas, like the first layer
  9. Layer the second can of enchilada sauce
  10. Layer the remaining cheese
  11. Bake for 30 minutes
  12. Cut into six equal pieces and serve topped with optional sour cream and cilantro
