I must admit that this isn’t a recipe I came up with on my own. There are many different version out there and I don’t know who the original person is to give them credit. I’ve played around with the recipe and came up with my favorite version of cloud bread. After the recipe I also have a list of a bunch of different ways you can use the cloud bread. The main way I use it is as bread for sandwiches, but there are tons of other things you can use it for – like pizza crust, English muffins, garlic breadsticks – pretty much anything you would use regular bread for. And not only is it super-easy to make, it’s really good. Plus I love that it’s gluten-free and has no carbs. My friend makes this all the time and calls it Revolution Bread, but it’s all the same basic recipe.
The following is a picture of the ingredients – cream cheese, egg, Cream of Tartar and salt. That’s it. No hint of a grain. It’s so easy my 11 year-old daughter likes to make it. A modification you may want to make is to add a sweetener of your choice. I don’t think it needs it, but depending on how you use the bread, you may want a little sweetness.

This is really simple to make but has tons of uses. I love that I can finally eat bread again on my low carb diet!
Preheat oven to 350
Prepare a baking sheet with parchment paper and cooking spray or a Silpat
Separate egg yolks and egg whites. Place in two separate bowls.
Whip egg whites with a pinch of cream of tarter until stiff (this step is important). This takes a few minutes
In a separate bowl whisk the egg yolks, cream cheese, Splenda and pinch of salt until creamy smooth
Fold the egg yolk in with the egg whites. Do not blend - just stir gently.
Spoon in 6 mounds on a parchment covered cookie sheet
Using a large spoon, spoon out your mixture on the prepared baking sheet in circles
Bake at 350 for 20-22 minutes
Remove from the oven and cool on a rack
Here is an idea of how you can use your cloud bread. Not really original, just a sandwich. But it gives you an idea of how it will look. I like to make a sandwich with turkey, bacon, cheese and lettuce.
