My Grandma used to make a whole bunch of different kinds of cookies for Christmas every year and give them to her friends and neighbors. She always made these snowball cookies every year. It’s one of my favorite memories I have of my grandma. The best part was the anticipation of taking a bite of one of these cookies and not knowing what was inside. We love the surprise factor involved. There would always either be a half a walnut or pecan or a piece of an orange slice or a gumdrop. Sometimes she would surprise us and put 3-5 chocolate chips inside. I loved that because the cookies weren’t very large we could have more than one. That made the anticipation factor even bigger. My Grandma isn’t around to make these anymore but I still make them for my children.
These gluten-free cookies have a peanut butter filling on a chocolate brownie cookie base with easy chocolate topping. As a Christmas cookie they are pretty popular but there is no reason you can’t enjoy them anytime of the year. They are a great combination of brownies, peanut butter and chocolate.
