I think it would be good with some chicken added or on the side. It has a tender yet firm texture like a great risotto rice is supposed to have.

These look so good to me. I want to make these right now and eat them up when they are nice and warm with the cheese stringing on my face. I love melted cheese like that. In fact, I think it’s one of my favorite foods. That cauliflower crust looks so crisp and crunchy made with the fried parmesan cheese and cauliflower. I can’t think of anything that would take me to my happy place faster than this. Not that I eat to be happy, but I think you know what I mean.

These are so easy to make, I don’t think it could get much easier. It is very simple to make. All you do is pulse the cauliflower in the blender a few times. Then you microwave the cauliflower, add the other ingredients and shape it into a crust. Then you bake it. The crust never turns out soggy. You could use it for a pizza crust or just eat it like breadsticks. Love that cheese on top!
